   Fermentation:          This was fermented in 60 gallon French oak barrels.  We prevented malo-lactic fermentation so as

                                  to retain crisp acidity.                           

              Aging:          This was aged in the barrels for 3 months prior to bottling and release for immediate enjoyment.

Residual Sugar:          0.02% (dry)
